We are always excited to have any Cup of Excellence coffee in our range and this latest coffee, from Alejandro Zelaya Andrade’s farm Aragon, which is located in Antigua, Guatemala is a very special. Cultivating both Bourbon and Caturra varieties, he then takes the ripe coffee cherries to his cousin Louis Pedro Zelaya’s mill, Bella Vista. At Bella Vista, the coffee is pulped and fermented employing the washed process. Careful attention is paid to cleanliness, separation of lots, and drying times on the patio. After resting in parchment for three to four weeks, the coffee is then milled and carefully packaged for it’s voyage to our roaster. The Zelaya’s teamwork helps insure that the quality of this beautiful coffee isn’t compromised during its processing and journey. Here are some of the descriptions noted by the Cup of Excellence jury: Green apple candy, plum, caramel, tangerine. Fresh fruit, roses, vanilla, butterscotch, brown sugar, apricot. Delicate, refined, thick body, harmonious, round, firm, sweet, heavy feeling in the mouth. As you can tell, this coffee delivers all the complexity you can look for in a coffee.
