This is one of China’s rarest teas and one of the ‘Famous Ten’ teas produced in China. It is the genuine Pi or Bi Luo Chun, grown on Mount Dong Ting near Wuxi in the Jiangsu Province. The tea bushes are planted between peach, plum and apricot trees whose blossoms lend their fragrance to the newly formed buds which are in turn, passed onto the drinker in the cup. The best grade is plucked at the spring equinox and one pound of this tea contains an amazing 60 to 70 thousand leaf bud sets. All the processing is done by hand for if the rolling of the baking leaves is not precisely done they will not achieve the perfect shape which earned it the name ‘Spiral of Spring Jade’ or ‘Green Snail Spring’. The tiny leaves are covered in fine white, downy hairs. This is an indicator of its remarkable quality and gives an excellent infusion with a yellow colour, sweet taste and 'astounding fragrance', which is another of its many names!
