'Wu Long' or Oolong Teas

Oolong or 'Wu Long' translates as Black Dragon and refers to a method of production that produces a tea somewhere between oxidised black tea and non-oxidised green tea. This is why they are sometimes known as semi-oxidised and in China "Blue" teas. Dependent on how oxidised they are, we are given an incredible variety of spectacular flavours and fragrances to experience. The processing of these highest quality oolongs is carried out by a tea master whose experience and technique will have been learned over at least thirty years and is as important as the growing conditions to the quality of the final product. They are rich in antioxidants, are believed to lower cholesterol and aid digestion and relaxation. Although the prices of the most famous varieties may seem a little high it is worth pointing out that the same leaves will withstand between 8 to 10 infusions making each cup cost just a few pence. China's 'Famous' oolong producing areas are Wuyi Mt, Anxi Mt and Fenhuang or 'Phoenix' Mt. These three places produce three distinctly different styles of tea and very varying characteristics within their own area. Working your way through the sample size packets of these remarkable teas is a very rewarding and eye opening experience for the tea lover. This tea is, unfortunately, often sold on its alleged weight reducing properties, Victoria Beckham claiming it to be part of her regime in staying slim. I cannot comment on its efficacy, but drunk in its leaf form it remains about a fifth of the price of the tea bags, filled with the lowest grade tea, I've seen advertised on the internet.

This good grade Oolong is grown on the highest peak in Anxi. It is an area free of pollution with an extraordinarily mineral rich soil. To ensure the juiciest leaves the tea is picked in the afternoon, this is evident when the tea is infused. The original shape of the silky textured, delicate and glossy leaves emerges from the skilfully, tightly rolled pellets. These leaves are fringed and spotted with an iron red colour. It is this that gives it the deliciously butterscotch fragrance and sweet, fruity flavour that typify the best Tie Guan Yin teas. It takes its name from the Iron Goddess and is sometimes known as Ti Kuan Yin. Legend has it that she made a gift of a special tea bush to devout buddhist monk, Wei Yin.

In addition to the Mount Fuji Sencha and King of Pu Erh teas, which are currently being exposed to much ado in the press regarding their alleged benefits to weight loss, I have added my favourite, and I believe healthiest of teas, Gabalong Oolong to the blend. With the final addition of our Tea of Life White Tea for good measure, if there is anything in the health aspect of tea, we should have it covered here! Whilst there is much evidence to support tea's image of being a very healthy beverage to consume, I wonder if these facts are being manipulated to prey on our desires for a quick fix to the eternal problem of maintaining a healthy, balanced diet. However, many of you are keen to put it to the test, and anecdotally many of our customers have found these teas individually to be helpful, so we have prepared the blend as requested. These teas, are delicious drunk individually and I cannot find any evidence to support their being more effective drunk as a blend, but I agree that it makes life a little easier having them together! The tea flavour is a mellow mix, with the distinctive note of caramel and vanilla of the Gabalong tea in the foreground. The delicate notes of the Sencha, whilst somewhat subdued by the other teas, adds a fresh edge to the cup, with the more earthy tones of the Pu Erh adding weight and body. I do not wish to enter into the world of science and add to the many claims made about this or any tea as I do not feel qualified to do so. From a personal point of view, and as you know, I love tea most for its flavours and fragrances, I do agree that tea brings about a general feeling of well-being, when prepared and drunk properly, slowly and in tranquility.

Mi Lan translates as Honey Orchid because this teas fragrance is likened to that particular flower. This is from the highest graded group of ‘Phoenix’ or Fenghuang oolongs known as Dancong, which range in price from this modest opener to up to fifteen times as much. ‘Water Sprite’ will yield two to three infusions from the same leaves, the more expensive varieties up to twenty. The tea releases a remarkable fruit and floral fragrance which lingers in the mouth for hours and in the cup for days! This is perfectly balanced by the trademark refreshing astringency, like the flesh and zest of a tangerine. Allegedly very effective at lowering tryglycerides, so often used as a dieting aid.

The most renowned of the four famous 'Rock' teas of the Wuyi Mountain and one of the most highly prized of China's 'Famous Ten'. These ancient trees grow in the mineral rich, sandy soil and yield just one pound of tea each. Believed to be one of the healthiest teas it has a sweet and mellow infusion with hints of apricot.

This very high quality Phoenix Oolong is grown at 1050 metres and is grown on the first generation of tea bushes cloned from the famous 'Song Dynasty' trees. Its character and fragrance belongs to the Zhi Lan type, which translates as 'Purple Orchid'. Its profound aroma also resembles tropical fruits, nectarines and peach. It has a silky quality in the mouth and leaves a long lasting flavour in the mouth which hints at grapefruit blossom. It offers many infusions from the same leaves.

This Phoenix Dancong Oolong is amongst the highest quality you are likely to try (unless you have $15000 plus and a very good connection in the government of China!). Its name describes the fragrance given off from this 'Single Tree' variety but does not do justice to its complexity. As well as almond you can distinguish numerous wild flower aromas and sweet fruits like apricot. It has a smooth, rich infusion that builds up in the mouth as one re-infuses the same leaves many times. It is produced from a few tea trees over 300 years old on Wu Dong Mountain.

This tea is made from one of the top four 'Song Dynasty' mother tea trees in China. These trees are over 600 years old and yield very little but truly delicious tea. Zhi Lan, which translates as 'Iris Orchid' is so called because it resembles the fragrance of this rare flower. Two of the mother trees are from this variety of the tea family which number into the hundreds. They grow on Wu Dong mountain. Of course, as with all high quality Phoenix oolongs it has an incredibly complex character that includes all of the nuances found across the full spectrum of tea. Flowers, tropical fruits, vanillin, butteriness and mellow woody notes seem to evaporate from the cup in succession. You are unlikely to come across a better example of Phoenix Oolong and it should be tried by any tea fan.

Song Zhong Wang, which means 'King of Song Dynasty Kind' is the very best type of Phoenix Dancong Oolong. It has been famous for over 900 years and this batch was grown on wild tea trees over 600 years old. Fenghuang or ‘Phoenix Mountain’ is located in China’s Guangdong Province. Dancong, meaning ‘single bush’ is the highest of four grades of oolong grown around this mountain, the best being found on Wu Dong Peak. This is one of the ten peaks that make up the mountain and these peaks play their part in creating a perfect environment for producing high quality tea by protecting the area from the cold of Northern China and the bad weather from the South China sea. Important factors in producing a great Dancong tea are altitude and soil, which must have a large amount of stones in it. However, the most important of all is the method of production. In examples of the very best tea, such as the one you are trying, this will be carried out by a tea master. A true master will bring out the ‘four spirits’ of beautiful appearance, glossy coloured leaf, rich aroma and sweet taste. This batch has a unique and powerful fragrance with a fruity, refreshing and light flavour.
