This speciality has been produced for more than a hundred years. Like White Monkey this is grown on the 'Big White' strain of tea bush in the high mountains of Fujian. After traditional hand plucking the leaf is baked for just a short time to preserve the tea's 'white soul'. It is covered in white hairs and yields a unique, mild and mellow infusion. Picked during a two week period in late April, this tea has a pronounced chestnut flavour with slightly spicy and fruity notes.
