    This special, premium robusta type coffee has a super thick liquor, dark chocolate body and flavour plus more than average caffeine! It has almost twice as much caffeine as the Arabica variety. Enjoyable in its pure form and useful to add a kick to your favourite espresso blend. Whilst Robusta coffees are not generally renowned for their fine flavour this treasure from Vietnam is a noticeable exception. It is particularly delicious when made with condensed milk.     Hacienda Sajonia produces very high-quality coffee generally but in our search for coffee perfection, we like to go one step further. To this end, the estate produces a small amount of their absolute best beans called Sajonia Reserva Familia. We think it yields one of the best darkly roasted coffees in the world. Darkly roasted coffees tend to trade the nuances of aroma for the big, bold character and the bittersweet, syrupy cup demanded by those who love very intense coffee. The Reserva offers something more though, with tones of rich, milk chocolate, hazelnut, caramel, Brazil nut, orange zest and molasses. Hacienda Sajonia is located in the beautiful El Diablo nature reserve high up in the relatively cool, cloud forest-clad mountains between Matagalpa and Jinotega in northern Nicaragua, placing it right in the middle of Nicaragua’s premier coffee growing region.     When sourcing coffee from Peru we look for coffee that can deliver a complex array of flavours. Typically we would hope to find notes of cream, caramel, lemon zest, marzipan, dark chocolate, pineapple, lemon, lime, pomegranate, bergamot, nutmeg, blackcurrant, raspberry, cherry, cane sugar and cocoa. We buy from different producers in Peru depending on quality and availability. They are all from worker’s co-operatives and where organic, sustainable farming methods are used.     This fully washed coffee was grown on ‘La Esperanza’ farm owned and worked by Gerardo Carvajal in the Bruselas, Huila region of Colombia, 1,600 meters above sea level. In this darkly roasted form, its complex character is described as having: notes of stonefruit, plum, toffee apple, brown sugar, dark chocolate and hazelnut.     This coffee bean at a dark roast is full bodied, with a brisk sweet flavour and exquisite bittersweet fruity aroma. Notes of treacle toffee, chocolate orange, caramel, raw cocoa, dried fruits, plum and molasses make it one of the world’s great dark roast coffees. The blend of coffee bean varietals, including Bourbon, helps create this very complex flavour profile.     Ethiopian Yirgacheffe Sesota Dark Coffee

    Ethiopian Yirgacheffe coffees are famed for their beautiful fragrance. When darkly roasted of course some of these complexities are lost yet it still retains its distinctive character. The citrus acidity changes to a dark fruit sweetness, hints of blackcurrant, spice, nutmeg, bonfire toffee and a sugar cane aftertaste make it one of the most refined of darkly roasted coffees. The coffee grown in this lush, green, mountainous area at altitudes up to 8,000 feet is referred to as ‘garden coffee’ due to most of it being grown on small-holdings of less than 1 hectare producing something up to 5 sacks of coffee beans.
