In preparing our range of coffees we have selected only the cream of the crop from each country. They are chosen for their quality and unique characteristics, which are linked directly to their growing conditions and equally importantly the way they are farmed.
Special thanks should go to these farmers whose artistry in their field has enabled us to enjoy these true coffee delights. Like their wine producing counterparts, creating the equivalent of a 'Grand Cru' is a painstaking achievement of which they are justifiably proud, especially in a market where general standards of quality are declining due to unsustainable low prices.
We roast all our coffee in the shop in our small batch roaster, so we can give careful attention to each varieties' optimum roast. This enables us to bring out the unique characteristics that our coffees are prized for. It also means you get to try them truly fresh.
We offer the following flavour notes as a guide but the best way to find out what they are like is to try them! We feel the best way to appreciate most of our coffees is in a cafetiere or filter but we have also stated those coffees suitable for making espresso or cappuccino.
We sell as little as 100g, which can be ground to suit your requirements. For fresher coffee still, invest in a good grinder, this makes even more difference. As always for any further advice or to order please ring us on 01522 560008. Have fun!

  3. Australian Skybury Supreme Coffee

    Australian Skybury Supreme Coffee

    At Skybury Plantation, they grow Bourbon and Catuai varieties of Arabica Coffee. They have created a unique coffee wet processing which highlights the great taste of the coffee. Having one of the world's most sophisticated processing facilities, they can 'shape' the flavour of the coffee and achieve taste profile elements found in other processing styles, or create their own uniquely Australian style. With this 'Supreme' lot they have left a small amount of the mucilage on the beans by interrupting the fermentation process. Fermentation is followed by a high-speed wash which locks in flavour and allows the bean to absorb the remaining mucilage. When this coffee is roasted, the mucilage 'caramelises' and releases a sweet, chocolatey flavour. It is a light-bodied coffee and slightly lower in caffeine than average.     Natural Mountain Water Decaf Coffee Dark

    If you give this coffee to someone without telling them it’s decaffeinated you will always be greeted with the same look of astonishment when they find out! Firstly because we apply the same criteria for excellence to the coffee we choose to decaffeinate as we do to all of our Grand Cru coffees. Expect flavours of dark chocolate, raisin, plum, liquorice, malt, black cherry and tobacco. Secondly, the method of decaffeination is designed to remove only the caffeine and not the precious flavour compounds that give coffee its character. The Mountain Water Process involves immersing the coffee beans in water to extract the 99.9% of the caffeine. No chemicals are used, and a filtering process allows the beans to maintain their characteristic flavour. The Mountain Water Decaf process uses clear, pure water from the glaciers of the Pico de Orizaba Mountains in Mexico, although often the coffee we choose is not in itself Mexican. This dark roast makes a phenomenally good espresso or base for a latté and cappuccino. Learn More

    Every company protects the recipe for their own special blend of beans believing it to be the perfect combination to make the ultimate ‘Espresso’ coffee. We are no different! This blend was created by us in 1996 when the received wisdom was that blends should be made only of coffee beans from Brazil and perhaps some ‘Robusta’. We started to experiment with some of the phenomenal Grand Cru coffees we were roasting, and enjoying in cafétieres and filter equipment, in an espresso machine. After much experimentation, we settled on what we still believe holds up as a truly Grand Cru espresso, and we named it Nero. We love the sweet body, blackberry, chocolate, walnut, black treacle and hazelnut character of this speciality. It is the go-to blend for our customers and Baristas alike when making an espresso.     Nicaraguan Black Bull Reserva Coffee

    Hacienda Sajonia produces very high-quality coffee generally but in our search for coffee perfection, we like to go one step further. To this end, the estate produces a small amount of their absolute best beans called Sajonia Reserva Familia. We think it yields one of the best darkly roasted coffees in the world. Darkly roasted coffees tend to trade the nuances of aroma for the big, bold character and the bittersweet, syrupy cup demanded by those who love very intense coffee. The Reserva offers something more though, with tones of rich, milk chocolate, hazelnut, caramel, Brazil nut, orange zest and molasses. Hacienda Sajonia is located in the beautiful El Diablo nature reserve high up in the relatively cool, cloud forest-clad mountains between Matagalpa and Jinotega in northern Nicaragua, placing it right in the middle of Nicaragua’s premier coffee growing region. The estate covers an area of 1,000 acres, of which over half is primaeval rainforest, home to an incredible array of flora and fauna. Learn More

  8. Panama Geisha Esmerelda Coffee

    Panama Geisha Esmerelda Coffee

    La Esmerelda farm on the slopes of Volcan Baru in Panama produces what is currently the most sought-after coffee in the world. Grown on a rare varietal known as Geisha, it has come to represent the pinnacle of coffee flavour. We are pleased to have purchased a micro-lot from the Jaramillo section of the farm. It is also one of the most expensive coffees in the world, a value based on its unique character and low yield. The air in Jaramillo is a high up in the mountains kind of wet and cold, surprisingly perfect for making the pronounced bergamot and jasmine aromatics of the Geisha variety sing. Notes of berry, citrus, mango, papaya, peach, pineapple, guava, honey, raspberry, apricot and mandarin are also described. The farm jumps up from rolling hills on its lower part to steep 40 degree inclines higher up, making harvesting a manual and challenging affair. It is these high altitudes that really make the Geisha’s bright, floral aromatics express themselves. With cooler temperatures and massive shade trees that have been standing for ages, it turns out that Jaramillo is the perfect place for this variety to have landed. To this day many of the top performing micro lots of Geisha coffee come from little patches on the slopes of Jaramillo.
